It was a veeery lazy weekend, therefore today: One more recipe!
These oatmeal cookies are a “great way to start a day”. They are very filling- have a lot of fiber – and almost no sugar. So if you don’t have time for proper breakfast or need a snack during the day, just grab two or three of them and you’re good to go :)
- 2 tablespoons of sugar
- 1 egg
- 125g of butter
- 1/2 cup of flour
- 2 cups of oatmeal
- 1/3 cup of sunflower seeds
- 1/3 cup of linseed
- ~1 cup of cashews
- 7-8 dried apricots
- 1 grated apple
- 1 teaspoon of: cinnamon, ginger, baking powder
Preheat the oven to 180C. Melt the butter. Cool it down a bit.
Beat the egg with sugar. Add the cooled butter and all the other ingredients. Mix well.
Put in small batches(~size of a heaping tablespoon) on baking paper, and bake for about 15-20 min, until golden.
